Welcome to The Popcorn Diet.
Hi! I’m Julie and I’m responsible for this random collection of recipes and ramblings. It’s mostly recipes these days, though. Although you’ll find some posts about other adventures, I’m really just excited to share delicious food that you can make at home. Some of my recipes are simple. Others are more complex. Regardless, I hope you’ll try something new and learn that good food is within your reach. It doesn’t have to come from a restaurant!
Where did the name come from? Well, I really love popcorn. I love popcorn so much that when I was in college, I adopted a popcorn diet of my own design. As a coxswain, I was supposed to keep my weight down. Our college’s dining hall served pretty good food. It was difficult to limit myself in the face of a thrice-daily all-you-can-eat buffet. So I began filling up on plain, air-popped popcorn before I went to meals. It seemed like a good way to fill up on something low in calories, preventing me from consuming an equivalent volume of high-calorie food at the cafeteria. (Side note: I eventually found out that I hadn’t invented the diet). That’s obviously not how I live these days.

When I’m not cooking, I’m working – my job is in clinical research, and I hope to attend PA school some day. Confession: I’m a huge nerd when it comes to biology. If you let me, I’d spend hours telling you why kidneys are the coolest organs, and how viruses are like ninjas. Whenever I have a chance, I love to travel. My goal is to set foot on every single continent! But I’m usually found in Atlanta, GA, where I live with a Westie, my wonderful boyfriend, and his awesome daughter. We love roller coasters and road trips.
